Turkey Meatloaf

So, who doesn’t have a memory of eating meatloaf as a child? I think very few. Well the other night I went to Zelko Bistro and tried their meatloaf . . . DELICIOUS!! I thought to myself I want to try and make meatloaf, but with turkey. Guess what I made my own version of turkey meatloaf. Here it is:


Ingredients:
-          2lbs turkey meat (93/7)
-          ¼ cup sundried tomatoes in oil
-          Salt & pepper
-          Minced garlic
-          Half of a large onion chopped finely
-          1 cup diced mushrooms
-          1 ½ cup bread crumbs
-          Olive oil
-          Shredded parmesan
-          Ketchup
-          Balsamic vinegar
-          Worceshire sauce
-           2 eggs


Directions:
Preheat the oven to 375F.
First sauté the onions, mushrooms and garlic in olive oil over medium heat. As they are sautéing chop up the sundried tomatoes. In a big bowl add the turkey meat, parmesan cheese, eggs, bread crumbs, salt, pepper, worceshire sauce and the cooked vegetables.  Now its time to get down and dirty, use your hands to mix up all the ingredients.  If you think that it needs more bread crumbs then go ahead and add them.  Once all the ingredients are mixed in thoroughly place them in a cooking dish and place in the over for an hour.  
While the turkey meatloaf is cooking prepare the sauce to go on top.  In a sauce pan add ½ cup ketchup, ½ cup balsamic vinegar, garlic, pepper,  ¼ cup olive oil and ½ cup worceshire sauce.  Bring the ingredients to a boil and then reduce the heat to allow the ingredients to simmer for about 15-20 minutes.  Once the ingredients have simmered try the sauce, it’s up to you to add more of which ever ingredient that you like the most. I had to add a little more ketchup to mine. 

Once the sauce is to your liking then add it on top of the turkey meatloaf after its finished cooking.

The turkey meatloaf turned out so well! So moist and delicious! It's even great the next day microwaved!! ENJOY!!!!
