I was in NYC over Christmas and came across a waffle stand . . . now this wasn't any waffle stand, the best waffle I've had in my life!!! There was an array of assortments that I could choose to top my waffle with, from chocolate, peanut butter, fruit, nuts and the list goes on. I thought I had picked peanut butter, but oh no it wasn't peanut butter it was homemade hazelnut peanut butter, which I then topped with chocolate and powdered sugar!!! DELICIOUS!!!!!!

4 Ingredient Pie
Ingredients:
- 5 tbsp unsalted butter
- 12 ounces sweetened shredded coconut
- 11/4 cup heavy cream
- 8ounce bittersweet chocolate(61% cacao)
Directions:
1. Preheat the oven to 350F.
2. In a food processor, process 3/4 of coconut and butter until it forms a ball. Transfer to a bowl and mix in remaining coconut with your hands.
3. Butter pie pan. Add coconut mixture to pie. Cover the edges with foil and bake for 10-15minutes, until lightly brown. Remove foil and bake for another 5minutes until the edges begin to brown.
4. Chop the chocolate up finely or place in food processor to break down.
5. Bring the heavy cream to a boil. Once the heavy cream is brought to a boil pour over chocolate and let stand for a few minutes. Then stir the mixture until completely smooth.
6. Pour chocolate mixture into coconut crust. Place in refrigerator for at least 30minutes. ENJOY!!

Kelsey Nixon's Fettuccine with Yellow Squash and Parmesan-Lemon Cream Sauce
This is a very easy and yummy recipe! I made the pasta from scratch which is very easy and lots of fun, but if you don't have the patience then you can use store bought fettuccine. If you want to be adventorous and try making your own pasta then you can purchase a Westin Pasta Machine from bed bath and beyond for $35. I paired the pasta with a spinach salad. You could pair the pasta with any type of salad, but I suggest something simple because the pasta sauce is heavy.
Fruit Tart
Ingredients:
- 1 1/2 cup crushed grahm crackers
- 1/3 cup butter, melted
- 2tbsp splenda
- variety of fruit, your choice
- one container of vanilla greek yogurt
- 1/4 cup water
- 1/4 cup sugar
Directions:
1. In a small bowl, combine grahm crackers, butter and splenda. Press ingredients into the bottom and up the sides of a pie plate.
2. Bake for 10minutes at 375F.
3. Let cool. Add greek yogurt to the center of the pie crust leaving the sides bare.
4. Cut and arrange fruit to your liking.
5. Boil equal part sugar and water until the sugar dissolves. Paint the simple sugar onto the fruit and place in the refrigerator.

Turkey Meatloaf
So, who doesn’t have a memory of eating meatloaf as a child? I think very few. Well the other night I went to Zelko Bistro and tried their meatloaf . . . DELICIOUS!! I thought to myself I want to try and make meatloaf, but with turkey. Guess what I made my own version of turkey meatloaf. Here it is:
Ingredients:
Directions:
Preheat the oven to 375F.
First sauté the onions, mushrooms and garlic in olive oil over medium heat. As they are sautéing chop up the sundried tomatoes. In a big bowl add the turkey meat, parmesan cheese, eggs, bread crumbs, salt, pepper, worceshire sauce and the cooked vegetables. Now its time to get down and dirty, use your hands to mix up all the ingredients. If you think that it needs more bread crumbs then go ahead and add them. Once all the ingredients are mixed in thoroughly place them in a cooking dish and place in the over for an hour.
While the turkey meatloaf is cooking prepare the sauce to go on top. In a sauce pan add ½ cup ketchup, ½ cup balsamic vinegar, garlic, pepper, ¼ cup olive oil and ½ cup worceshire sauce. Bring the ingredients to a boil and then reduce the heat to allow the ingredients to simmer for about 15-20 minutes. Once the ingredients have simmered try the sauce, it’s up to you to add more of which ever ingredient that you like the most. I had to add a little more ketchup to mine.
Once the sauce is to your liking then add it on top of the turkey meatloaf after its finished cooking.
The turkey meatloaf turned out so well! So moist and delicious! It's even great the next day microwaved!! ENJOY!!!!

Jello-O Adult Lounge
Everyone knows how I love RED wine! Well I also love to explore and find new recipes. I was asking my girlfriend Anna for suggestions for healthy deserts I could make for dinner tomorrow night. She suggested that I make banana pudding and use the sugar free Jello-O pudding. Since she said Jell-O, I thought who not go to the Jell-O website and look at some of their recipes . . . come to find out they have what is called the "Jell-O Lounge" aka Adult Beverages!! How cool! We have all known how to make Jell-O shots from college, but Jell-O cocktails and popsickles!

I think my favorite is Pina Colada Pops
ADD boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Stir in rum. Add enough ice to reserved pineapple liquid to measure 3/4 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
REFRIGERATE 15 min. or until gelatin is thickened. Stir in pineapple. Pour into 6 paper or plastic cups. Freeze 1 hour.
INSERT wooden pop stick or plastic spoon in center of each cup. Freeze 3 hours or until firm. Remove pops from cups before serving.
